The condition is characterised by an irregular cavity in the centre of the tuber. The cavity wall has a corky lining, which can be covered in the mycelium of saprophytic fungi. Prior to the formation of the cavity, the cells in the affected tissue can turn brown. It is thought that the condition arises from disturbances in the growth process caused by alternating dry and damp weather conditions during the vegetation period.
Cavities occur predominantly in large tubers, and their development is promoted by a surplus of nitrogen and wide plant spacing. Where Sweden's most common varieties of food potatoes are concerned, the condition is most frequent in Ulster Chieftain.
